What inspired your journey into plant-based cooking, and how has your approach evolved over the years?
My journey into plant-based cooking began with a deep love for nature and a desire to nourish both body and spirit. Over the years, I’ve evolved from simply preparing meals to truly understanding the healing power of whole foods. It’s been an incredible adventure of experimenting with flavors, textures, and techniques that showcase the beauty of plant-based cuisine. Each dish tells a story, and I strive to make healthy eating an exciting and joyful experience!

San Diego has a vibrant food scene—how do you incorporate local, seasonal ingredients into your dishes?
San Diego’s incredible climate and diverse agricultural landscape provide a bountiful array of local ingredients! I love visiting farmers' markets to discover what’s in season, allowing me to create dishes that are not only fresh but also bursting with flavor. By incorporating these ingredients, I celebrate the essence of our community and support local farmers, which makes every meal a delightful reflection of San Diego’s vibrant food culture!

 Can you share a favorite dish that embodies both flavor and nutrition? What makes it special to you?
One of my favorite dishes is the vibrant crispy Quinoa and Roasted Vegetable Salad. It’s a colorful medley of seasonal veggies, tossed with protein-packed crispy quinoa and drizzled with a zesty lemon-tahini dressing. What makes it special is its ability to be both nourishing and incredibly delicious, and it’s a perfect example of how plant-based eating can be satisfying and fun! Plus, it’s versatile—perfect for any occasion!

Sustainability and conscious eating are key topics today. How do you ensure your cooking supports both health and the environment?
Sustainability is at the heart of my culinary philosophy! I focus on using organic, locally sourced ingredients and minimizing waste in my kitchen. I believe that every meal should be a celebration of the earth’s bounty, so I embrace creative ways to use every part of the ingredient. By promoting mindful eating and encouraging others to make conscious choices, I hope to inspire a community that values health and the planet.

What advice do you have for someone transitioning to a more plant-based diet without feeling restricted or overwhelmed?
My biggest piece of advice is to embrace the journey with an open heart! Start by incorporating more plant-based meals gradually, focusing on foods you already love. Experiment with new recipes and flavors, and don’t be afraid to get creative! Remember, it’s not about perfection but about making choices that feel good for you. Celebrate each small step and enjoy the delicious adventure ahead!

Organic and high-quality plant-based ingredients can sometimes be expensive or hard to find. What are some ways we can make organic food more accessible and affordable for more people?
I believe in the power of community! Joining a local co-op or community-supported agriculture (CSA) program can help reduce costs and make organic produce more accessible. Additionally, growing your own herbs or vegetables, even in small spaces, can be a rewarding way to enjoy fresh ingredients. Education and awareness are key, so I love hosting workshops and cooking classes to share tips on budget-friendly plant-based cooking and making the most of seasonal produce!
